I’ve been trying to experiment with these carb-free veggie substitutes recently and I’ve been pleasantly surprised.
I’ve given courgetti a go – it’s also quite tasty raw in a salad – and have also used cauliflower rice in a stir-fry. I was a fan of the rice replacement. Despite it’s off putting smell, it tastes pretty good with some low salt soy sauce, mixed veggies and chicken.
My favourite so far has been butternut (squash) spaghetti. It’s so easy and also really tasty heated up the next day, perfect for a work lunch. Check out how to make my creation below.
